Streptococcus mutans is a Gram-positive, facultatively anaerobic coccus of the family Streptococcaceae, and the principal aetiological agent of dental caries. It thrives in the oral biofilm by fermenting dietary sugars to lactic acid, producing an acidic microenvironment that demineralises tooth enamel, and synthesises water-insoluble glucans via glucosyltransferases that strengthen plaque adhesion. Genomically, S. mutans has a well-characterised genome encoding a suite of acid tolerance, competence, and bacteriocin (mutacin) systems that underpin its competitive fitness in the oral ecosystem.

How to read this: A value outside a failure limit fails QC. Within the failure limits, values beyond a warning limit are borderline and worth a manual look; values within the warning limits pass that criterion. A dash means that no bound is defined on that side.
