Staphylococcus equorum is a coagulase-negative, Gram-positive coccus in the family Staphylococcaceae, originally isolated from the skin of horses. It is frequently found in fermented foods such as smear-ripened cheeses, cured sausages, and fermented fish, where it contributes to flavour development and is generally regarded as non-pathogenic. S. equorum possesses a genome of approximately 2.7 Mb and is notable for salt tolerance, lipase and protease production, and the absence of major virulence factors typical of pathogenic staphylococci.

How to read this: A value outside a failure limit fails QC. Within the failure limits, values beyond a warning limit are borderline and worth a manual look; values within the warning limits pass that criterion. A dash means that no bound is defined on that side.
