Pediococcus pentosaceus is a Gram-positive, homofermentative lactic acid coccus in the family Lactobacillaceae, typically arranged in tetrads, and widely used in food fermentation. It is important in the production of fermented vegetables, sausages, and silage, where it contributes to preservation through rapid acid production and bacteriocin synthesis. P. pentosaceus has a relatively compact genome (~1.8 Mb) and is increasingly studied as a candidate probiotic owing to its acid tolerance, bile resistance, and ability to produce antimicrobial peptides such as pediocin.

How to read this: A value outside a failure limit fails QC. Within the failure limits, values beyond a warning limit are borderline and worth a manual look; values within the warning limits pass that criterion. A dash means that no bound is defined on that side.
